Weekly or Bi-Weekly Meals

This is the most common service provided by a personal chef. I come to your home once a week, or every other week, and prepare a specified number of preselected meals for you to enjoy in the week or two ahead. You select items from my menu, or we design a custom menu based on your dietary preferences or needs. I do the shopping, prepare all of the food in your kitchen, and clean up so that you won't even know I was there. I leave items in your fridge or freezer with instructions for reheating. Private Events

Let Custom Provisions cater your next event. Celebrate an anniversary or birthday with an elegant dinner for two. Invite the whole family for a graduation or holiday celebration. Cocktail receptions, even backyard barbecues, whatever the occation, enjoy the party instead of cooking and cleaning while still enjoying a home-cooked meal.

We can desing a custom menu together, or you can choose from my existing reception and dinner menus. As with weekly meal service, I do the shopping and prepare all the food in your home.

Culinary Instruction

Custom Provisions offers culinary instruction for individuals and groups on a variety of topics.

Individual classes run from 3 to 4 hours long. Although most classes will leave you with some food to enjoy, they focus more on teaching techniques than producing finished dishes. All classes include written materials that you can refer back to. Individual classes are offered on the following topics:

  • Kitchen 101: Knife skills, avoiding cross contamination, proper food heating/cooling.
  • Knife Sharpening: Learn to use a water stone to make your knives better than new.
  • Seasoning: Balance sweet, sour, salty, bitter, and spicy to excite your palate.
  • Poultry: Break down whole birds and use every bit to get several meals.
  • Fish: How to select, fillet, and prepare round fish and flat fish.
  • Braising: The art of stews and slow-cooked meats.
  • Sauces: Simple pan sauces, luxurious reductions, decadent butter sauces, and vinaigrettes.
  • Cakes: Sponge cakes, pastry cream, butter cream icing, and simple decorations.
  • Chocolate: Learn to temper chocolate for dipping, molding, barks and more.

Group classes focus more on providing food for the group in a party-like atmosphere. Classes consist of 1 to 2 hours of active instruction and hands-on activity, after which you and your friends can enjoy the fruits of your labor. As with individual classes, written materials are provided to all who attend. Group classes are offered on the following topics:

  • Hors D'Ouevre Party: Combine a handfull of simple ingredients into endless party bites.
  • Seasoning: Balance sweet, sour, salty, bitter, and spicy in an entire meal.
  • Sauces: Pan sauces, reductions, butter sauces, and vinaigrettes with dishes to match.
  • Chocolate: Learn to temper chocolate for dipping, molding, barks and more.

Knife Sharpening

As a professional butcher, I learned to sharpen my own knives and keep them sharp. I also learned that, while knives come in different levels of quality, any knife can be hand sharpened to better-than-factory condition.

I hand-sharpen knives on quality Japanese water stones to remove a minimum amount of metal and finish them on super-fine stones for a mirror-like cutting edge. Prices are as follows:

Japanese Single-Bevel Knives
